What you need:
1 cup water
1 ½ cups vegetable broth
1 cup diced tomatoes
2 dried chile peppers, shredded
1 cup jasmine rice
Paprika, pepper, salt and chili powder, to taste
What you do:
Place water, vegetable broth, diced tomatoes and shredded chiles in a medium saucepan and bring to a boil.
Add rice and cook for 15 minutes, stirring once about halfway through. Remove from heat and let sit for five minutes.
Add seasoning to taste and serve.
