Pumpkin Pie Pancakes

What you need:

2 cups flour
2 tbsp. flax meal
2 tsp. pumpkin pie spice
2 tsp. baking powder
¾ cup sugar
½ cup pumpkin puree
2 cups dairy or soy milk

What you do:

Mix all of the dry ingredients together with a fork. Add in wet ingredients and mix until only a few small lumps remain. Pour a small amount of batter into a pan and cook over medium heat until the top of the pancake begins to bubble. Flip and then cook for one to two minutes. Repeat until the remaining batter has been used. Serve with icing or maple syrup.
